Gianelli Sausage Gumbo

 1 package of Gianelli Hot Turkey Sausage Links
 3 Teaspoons of Canola Oil
 1 Large white onion, diced
 4 cloves of garlic, minced
 1 teaspoon Cajun seasoning
 2 Tablespoons of all purpose flour
 5 cups chopped tomatoes
 5 cups chicken broth
 1 - 16oz frozen bag of Okra
 ¾ cup instant brown rice
 1 bunch scallions, trimmed and chopped

Take sausage out of casing and cook in large skillet over medium heat. Crumble sausage as it cooks. Cook until sausage is no longer pink and cooked through. Pat the sausage down with paper towels to remove excess grease.

In a large pot over medium heat sauté onions in oil until translucent, stirring often

Add garlic and Cajun seasoning, continue stirring for about 30 seconds

Add flour slowly while stirring to coat the onions. Stir until flour starts to get a little brown, about 1 minute

Add the tomatoes and stir occasionally for about 3 minutes

Add broth, cover, higher heat, and bring to a boil

Add sausage to the pot along with the Okra and rice. Reduce heat to simmer. Cook about 15 minutes or until Okra is heated through and rice is tender.
