Blueberry Pancakes, Eggs, and Gianelli Sausage Patties

Part 1
 1 package of Gianelli Hot/Sweet Patties
 Foil
 Rimmed Baking Sheet
Part 2
 2 cups all-purpose flour
 1/4 cup sugar
 21/4 teaspoons baking powder
 1/2 teaspoon baking soda
 1/2 teaspoon salt
 2 eggs
 2 cups buttermilk
 1/4 cup melted unsalted butter, plus some for frying
 1 cup blueberries, fresh or frozen
 *optional: whipped cream or maple syrup for topping

 2 tablespoons Butter
 Salt and Pepper

Preheat oven to 425

Line a baking sheet with foil and arrange the patties on the sheet about 1/2 inch apart

Bake the sausage for 10 minutes, then flip each patty and rotate the baking sheet back to front and bake for 10 more minutes until browned to your preference

In a large bowl sift together the flour, sugar, baking powder, baking soda, and salt (dry ingredients)

Beat the eggs with the buttermilk and melted butter (wet ingredients)

Combine the dry and the wet ingredients into a lumpy batter

Heat some butter in a skillet over medium heat. Spoon 1/3 cup of batter into the skillet and sprinkle the top with some of the blueberries. Cook for 2 to 3 minutes on each side

Heat the butter in nonstick skillet over medium-high heat until hot

Break eggs and put into pan, then reduce heat to low

Once the whites are completely set cook for 3-4 minutes per side. Sprinkle with salt and pepper
